Egyptian Tahmayia aka Felafal

Tahmayia (felafal) is a famous Egyptian street food eaten at breakfast.
mot can be eaten on its own in a sand or alongside other breakfast condiment.
it’s very filling and is great for vegetarians and vegans :-)
Ingredients
Split Fava Beans x 1 cup ( can be replaced with chick peas)
Onion x 1
Garlic cloves x 3
Fresh Coriander x handfull
Coriander Seeds x 1.5tsp
Cumin Seeds x 1.5tsp
Salt x 1 tsp
Vegetable Oil x enough for frying
Baking Powder x 1 tsp
Sesame Seeds x 2 tbsp
Method
Step 1

Wash your Fava Beans and then blanch in boiling water and leave to soak for a minimum of 4hrs, ensure you change the water often as the beans can go off
Step 2

In a pesel and mortar crush up your dries coriander and cumin seeds
Step 3

Roughly chop up your onion, garlic and fresh coriander
Drain the Fava beans and rinse
Step 4

In a food processor add the drained Fava Beans, fresh coriander, onion, garlic, dried spices and salt and using cutting blade for the food processor and blend all the ingredients together until all the ingredients and almost paste like you need a little bit of texture
Step 5

Once blended in a bowl add a teaspoon of baking powder then place in the fridge for a minimum of an hour
Step 6
Heat oil for shallow frying once you to temperature prepare your Tahmayia
Step 7

Using your hands take a tablespoon size of the cold mixture and make in to a thick disk shape try bot to make them to thick or they won’t cook in the middle when fried
Step 8
Once make in to a disk shape sprinkle the sesame seeds on to both side and then add to the oil

Don’t over crowed the fryer as this will reduce the heat and the Tahmayia will fall apart
Note* if your mixture is too wet and your disks are falling apart in the oil add some flour to the mixture a little at a time until you have the right consistency
When you see the disks start to change colour to a golden brown flip over to cook the other side once both side are done take out of the oil and place on to some kitchen paper to help absorb some of the oil

Then eat while they are hot!!!

If you find you have made too much mixture you can make portion sizes to freeze and when you want to cook some off make sure to defrost before cooking
