Potato Tagine



This wonderful dish is a staple in Egyptian house holds easy to make and delicious this may be why we actually call it delicious potatoes!


Ingredients

Potatos 1kg

Onion 1

Garlic 1/2 clove

Totatoes 1kg

Tomato paste 1 tbsp

Dried Coriander 1 tsp

Dried Cumin 1 tsp

Salt to taste

Parsley to garnish


Method


1.

Peel and slice potatoes set to one side


2.

Blend your tomatoes and then set aside



3.

Cut and fry onions and garlic until golden brown

4.

Add blended tomatoes to onions and reduce down


5.

Half way through reducing down add in spices and mix in well



6.

Once reduced down add in sliced potatoes and top liquid up with meat or vegetable stock


7.

Keep the mixed on a medium heat simmering until the potatoes are cooked through then transfer to the oven



8.

When your potatoes have a little browning on the top take out and enjoy with rice and salad
